Recipe // Candy Coated Pecans

When Wes & Megan were in town, Megan, my Mom & I actually managed to find some spare time to squeeze in a little baking! I mean, it's not like we spent hours in the kitchen- we just whipped up some candied nuts, which took about ten minutes to make & an hour to cook. Definitely an easy recipe. {Also, the word nuts, any any context whatsoever, never ceases to make me giggle. I've said it before, and this just proves it once again- I'm secretly a 12-year-old boy.} This recipe would be perfect to add to your repertoire for snacks at a dinner party {SO FANCY!} or around the holidays. They make the whole house smell yummy. Plus, we all know that everyone loves nuts!! {HA I had to do it. It was too easy.} These bad boys are dangerous though- before you know it, you've eaten your body weight in pecans. They're just like chips- it's impossible to have just one! 



CANDIED PECANS

ingredients:
2 egg whites
1 tablespoon vanilla extract
1 pound pecan halves
1 cup white sugar
3/4 teaspoon salt
1 teaspoon ground cinnamon

directions:
1. Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.
2. In a mixing bowl, whip together the egg whites and cinnamon until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.
3. Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.
4. Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

{We made a few changes to the original recipe. Trust me- they turn out perfect!}

  1. OMg i love those, when i lived in mexico I always used to buy tons and tons in every little stand on the streets. thanks for the recipe, as soon as I can eat again I'm going to give them a try :)
