Recipe / Garbage Salad


As a self proclaimed candy & cheese fanatic, I can admit that the idea of me eating healthy in the New Year is a bit shocking. I'm usually content to order pizza, wash it down with a few beers and then go out for ice cream. (I just described myself as basically equivalent to any and all heterosexual men in America.) But I realize that my metabolism won't always be what it is now, and if I want to drop a few pounds, sooner is better than later. Plus, I hate being referred to as an unhealthy vegetarian, or a vegetarian who doesn't eat vegetables. I want to be healthy! So in an effort mix in some healthy vegetables into my diet, I've been making myself what I like to call "garbage salads"- meaning I basically just throw whatever vegetables and fruit I have into a bowl and call it a salad. Fancy stuff!


This afternoon, I mixed lettuce, onion, green pepper, jalapeño, Craisins and croutons with a bit of Extra Virgin Olive Oil & Balsamic Vinegar. Simple, crisp & yummy! Even though I'm a fan of any and all creamy dressings, I'm digging the EVOO & Balsamic Vinegar combo. It's so light and fresh, and majorly cuts down on the calorie count. I know it doesn't make me ideal to make out with, but my favorite veggies are onions and jalapeños. (I think it's because I'm Mexican, but have zero scientific proof to back it up.) So any salad I make almost always has a bit of a kick because of my penchant for onions & jalapeños  While I know that this salad would be healthier if I added in spinach, kale, cucumbers, tomatoes and all of that stuff- I'm working up to that point. Baby steps! For today, the fact that I ate a salad for lunch (and enjoyed it) is simply enough for me.

  1. super fancy stuff! I like to have red and green onion, bell pepper, tomatoes, basil and avocado. yum yum!

  2. mmm this sounds awesome! I'm a huge fan of onions (on everything. I swear.) but red peppers and whole-wheat croutons too. also, what helps a lot for flavor (something I need looooads of in a salad) get chipotle dressing! it's delish - especially with other veggies too. I ate like a pound of carrots with the stuff. congrats to you for eating healthy!

  4. I just had a giant salad for lunch for much the same reason! I buckled and bought all natural creamy Caesar dressing, but I promised myself to only use it according to the actual serving suggestion. (Side note: never use fat free dressing - you need fats to help absorb the good stuff.) I like Trader Joe's lean grilled chicken breast strips, their Healthy 8 chopped veggie mix, and Romaine lettuce. If I have tomato, onion, or guacamole in the house, I'll add those too.

  5. Onions are 100% my favorite. Garlic is second. I'm seriously surprised any guy has ever been brave enough to kiss me..

  6. I loooove creamy dressings too (ranch is my guilty pleasure), but I usually go for vinaigrettes. You can never go wrong with olive oil and vinegar. Sometimes, I like to add a little lemon in there too.
